To prepare metal pans:
1 part flour to 3 parts melted butter, mix into a paste and brush liberally over all the crevices and up the sides of the pans. Freeze this for at least an hour before decanting cake mix into it and baking.
Another good preparation method is to cut little shapes out of greaseproof paper (i.e. to fit the shape of the wheels, etc.) so the cake comes out easily without losing the definition of the mould.
Place on a baking sheet before filling with cake mix, otherwise you'll wobble and spill trying to transfer to the oven!
Lightly oil the mould, then trace and cut out number from greaseproof paper to line the base.
Basic cake recipe (for one number cake)
All in one method (bung everything into one mixing bowl, mix!)
8 oz sugar
8 oz room temp butter
8 oz self-raising flour
1/4 tsp salt
2 tsp vanilla or other flavouring extract
1 tbsp citrus zest, if desired
Food colouring - 1/4-1/2 tsp gel, if desired
NB: for chocolate cake, subsitute 1.5 oz self raising flour for cocoa powder, and add scant 1/2 tsp baking powder. You can also fold in chocolate chips, soft fruits, raisins etc coated in flour at the end.
